After the huge success of last week's recipes recycling , today I propose a new recipe using an ingredient that will surely be advanced in the holidays just passed : Lentils . The recipe that I created for you , I've titled: Fantasy Winter Salad. It ' a very healthy salad and low calorie . Perfect for vegetarians, but also for vegans ( with my suggestions that you find at the end of the recipe) . And not only can be a great meal for those who consume lunch in the office or follow a diet restricted . In this recipe , the ingredients are present there also , Parmesan cheese and cream of balsamic vinegar of Modena. Are present only in small amounts and make this dish tasty, low calorie , but very rich in vitamins and calcium. A salad that can also become a main dish, really ideal for everyone.
Fantasy winter salad
Ingredients for 3-4 people :
1 large orange (preferably organic )
1 fennel bulb (preferably organic )
100 g of lettuce or corn salad Valfrutta *
1/2 jar of cooked lentils Cirio* or Valfrutta*
Flakes of Parmigiano Reggiano DOP * enough
Cream of Balsamic Vinegar of Modena IGP enough
Extra virgin olive oil to taste
A few pinches of salt to taste
Wash and peel the orange ( remove the peel with a knife along the inside of the orange and white part ) and cut into small pieces. Wash and cut the fennel into slices 1/2 inch thick. Drain the lentils from their fluid retention . Then dial the pot : bringing together valerian, fennel, orange pieces, and lentils . A pinch of salt, and drizzle with a little extra virgin olive oil . Finish with parmesan cheese and and very little cream of balsamic vinegar.

If you are vegan or want to reduce the calories in this tasty recipe , you can substitute with Tofu parmesan cheese into small pieces. If you do not particularly love the cream of vinegar, you can substitute it with soy sauce . Or , more simply : replace both ingredients with those recommended .
For those on a diet : corn oil is also an excellent substitute extra virgin olive oil .
